First Annual Cava Competition.
The first annual Cava Competition hostess by CitySip happened this past tuesday on the 9th at Leyenda who's sponsor was Palm Bay International. This competition was one of the most fun and challenging competitions I've had the pleasure of participating. Having to enter one cocktail is challenging as is, but two is a lot to think about. I had the pleasure of pulling los amantes mescal reposado, who's smoke and distinct vanilla and citrus undertones are beautiful and complex. Then also a control spirit that everyone was to use is Don Zoilo Amontillado Sherry and Pera Ventura Cava.
The idea behind my Sherry Cava cocktail " Reuniting with Charlotte" was to create something that was classic and elegant. The Don Zoilo Amontillado Sherry was a very interesting spirit in the fact that unlike other Amontillado sherry's this had a strong acidity and lacked a sweetness and roundness that I'm familiar with in most Amontillado's. I decided to use two rum's and a small amount of caramelized cinnamon infused Demerara sugar, and saline solution to round out the favors of citrus.
Reuniting with Charlotte
- 75oz Sherry
- .25oz Blackwell Rum
- .25oz santa teresa rum
- .25oz caramelized demarera Cinnamon
- 4 dashes Saline solution
- Top/ Cava
- Coupette glass- Orange zest discarded- garnish Nasturtium Orange edible flower
My Los Amantes Reposado Cava "Caring for Lantana" cocktail ending up becoming a more complex cocktail then that of the sherry. The Reposado Mezcal was beautiful, green and smokey with undertones of vanilla. I wanted this cocktail to be tight, small and earth, yet very stunning. while on my way to work one day, I wanted to grab a quick juice , as entered a women walked out with a flower in her hair and a beet red juice in her hand. In that instance It hit me to do a beet, agave cocktail. I keep the cocktail tight In a nick and Nora glass and didn't let any ingredients take over anything else with out adding to the others.
